Cauliflower Coconut Sweet Potato Soup

Food processor or an immersion blender
Ingredients
4 1/2 cups diced sweet potatoes
A whole head of cauliflower(diced)
28 oz. coconut cream
1/2 cup coconut water
5 tsp coconut oil
salt and pepper to taste
Step 1
Put coconut oil in pan and heat on medium heat; add sweet potatoes and saute 10-15 minutes or until tender; then remove from pan and set to the side
Step 2
In the same pan add the cauliflower and saute on medium for about 5 minutes; after the 5 minutes add the coconut cream and sweet potatoes to pan; add salt and pepper to taste and let simmer til cauliflower is tender
Step 3
Once cauliflower is tender blend soup in food processor or with an immersion blender; using the coconut water to thin soup to your desired consistency
